Ingredients:

  • 350 g Chestnut
  • 500 g Carrot
  • 150 g Leeks
  • 100 ml White Wine
  • 1 cup creme fraiche cheese
  • 1 salt
  • 1 Nutmeg ground
  • 30 g Butter
  • 1 TL Sugar
  • 1 pepper



How to Cook German Chestnut Soup Recipe:

  1. Wash and dry the chestnuts and cut across the top with a sharp knife. Place on a baking sheet and bake in the oven at 180 degrees for 15 minutes.
  2. Allow the chestnuts to cool for 5 minutes, then remove the skin. Clean the leeks, cut the light green and white stems into rings. Put it in a sieve and wash it. Peel the carrots and dice. Melt the butter in a saucepan and add the chestnuts. Sprinkle with sugar and let it caramelize a little. Stir in the onions and carrots and sauté.
  3. Deglaze with wine and stock, cover, and simmer for half an hour.
  4. Stir in the crème fraîche and puree everything. Season the soup with salt, pepper, and nutmeg.
