The taste of the cheese is so soft because it is made from quark, which is a soft white cheese that has a slightly sour taste. The outer layer is also sweeter and softer when eaten. This cake is usually combined with a variety of fresh fruit, such as strawberries, blueberries, or cherries, as a flavor enhancer topping. 


Ingredients

  • 2 1/2 Eggs
  • 110 gr sugar
  • 1/2 pinch(s) of salt
  • 1 piece Vanilla Bourbon sugar
  • 1/2 organic lemon
  • 1/2 kg Quark (e.g. low-fat quark)
  • 1/2 vanilla custard powder (for cooking)
  • 30 g flour
  • Fat and flour for mold


How to Make Käsekuchen

  1. Separate the eggs. Beat egg whites with 110 g of sugar and salt until stiff. Cool.
  2. Beat egg yolks with 110 g of granulated sugar and vanilla sugar until soft. Finely grate the lemon zest, squeeze the lemon juice (use the rest for other purposes). Add lemon zest, juice, low-fat quark, custard powder and flour. Gently fold the egg whites under the curd mixture so they don't fail.
  3. Grease a springform pan (26 cm ) and sprinkle with a little flour. Pour in the cheesecake batter and bake in the preheated oven (electric hob: 160°C / oven: 140°C) for 50-60 minutes, then allow to cool completely in the oven turned off.
