Chicken Fajitas

Mexican Fajita, in Tex-Mex cuisine, is roasted beef peeled with peppers and onions that is usually served over flour or corn tortillas. The term originally referred to skirt steak, a cut of beef that was first used in the dish.

 Ingredients:

  •     1 whole chicken breast, one, not one side
  •     1/2 red bell pepper
  •     1/2 green bell pepper
  •     1/2 yellow bell pepper
  •     1/2 onion
  •     2 cloves of crushed garlic
  •     1 tsp chili powder
  •     1 tbsp tomato paste
  •     1/2 tsp salt
  •     1/2 tsp pepper powder
  •     2 tbsp olive oil
  •     1 tbsp unsalted butter
  •     1 stalk of cilantro or cilantro, I skipped it because I didn't like it

how to make chicken fajitas:

  1. Slice peppers and onions. It's good to slice it lengthwise. Set aside.
  2. Slice chicken breast lengthwise. Sprinkle salt and pepper. Rub and leave for 2 minutes.
  3. Heat the oil. Saute garlic and onions until wilted. I like it a bit crunchy so I cook some of the onions last. Then add the chicken. Saute until half cooked.
  4. Add peppers and tomato paste. Finally, the rest of the Bombay, if necessary, add olive oil and chili if you like it spicy. Taste check.
