Recipes Japan | Sakura mochi is a traditional Japanese cake, made from ground glutinous rice and wrapped in a cherry leaf.



Ingredients:

• 8 cherry leaves preserved with salt

• cup (50 grams) wheat flour

• 1 tsp sugar

• A pinch of salt

• 1 tbsp potato starch (or cornstarch)

• cup (100 ml) water

• A little red food coloring

• 160 grams of red bean paste (See Zenzai recipe)

• Vegetable oil for cooking dough


How to Make Sakuramochi:

  1. Soak the cherry leaves in water for about an hour to remove the salt.
  2. Mix flour, sugar, salt, and potato starch in a bowl. Add water and stir to make a smooth dough. Add a few drops of red colouring so that the mixture is pale pink.
  3. Heat the frying pan. Coat the frying pan with vegetable oil. Make an omelette with a measure of one soup spoon of dough for one omelette. Use the back of a spoon to spread the dough into a thin, oval omelet. Heat over low or medium heat. Turn it over after about a minute after one side is cooked. Remove and let cool.
  4. Remove the cherry leaves from the water bath, dry using a cloth or kitchen paper. Divide the red bean paste into 8 oblong servings.
  5. Place a serving of bean paste on each omelet, then roll it up. Then wrap the roll with cherry blossom leaves. Let the sakuramochi take some time to absorb the fragrant smell from the leaves.
