Ingredients
- 500 grams of wheat flour
- 170 grams of ground almonds
- 4 tsp ground ginger
- 2 tsp cinnamon powder
- 1 tsp bicarbonate of soda
- 400ml clear honey
- 2 lemons, finely grated rind
- 170 grams butter
- cloves, grated nutmeg, and black pepper to taste
- 2 tsp baking powder
For the icing
- 200 grams of sugar
- 2 egg whites, beaten
How to Make Lebkuchen
- Place dry ingredients in a large bowl. Heat the honey and butter over low heat until the butter melts in the skillet and pour it into the flour mixture with the lemon zest. Mix well until the dough comes together and is quite firm. Cover and let cool.
- Preheat oven to 180 °C / convection 160 °C / gas 4. Spread the dough by hand into about 30 balls 3 cm wide, flatten each, and cut into pieces. Spread the biscuits on two top plates lined with parchment. Bake and let sit for 15 minutes, then cool on a wire rack.
- Ice cream biscuits mix powdered sugar, egg white, and 12 tablespoons water to make a smooth, liquid glaze. Soak the top of each biscuit in the glaze and spread it behind the knife. Dry in a warm room.
