Chinese Claw Dim Sum Recipe
Ingredients:
500 grams of claws, clean
1 L ice water
oil for frying
Seasoning ingredient:
6 cloves of red onion, thinly sliced.
4 red chilies, sliced oblique.
3 cm ginger, cut into matchsticks.
3 pieces of jackfruit/flower of Lawang
3 tbsp soy sauce
3 tbsp oyster sauce
2 tbsp sesame oil
2 tbsp tomato sauce
2 tbsp sugar
3 tbsp dark tacos/taco (optional)
1 tsp dark pepper powder
700 ml of water
Salt and powdered broth to taste
2 spring onions, sliced oblique
1 tbsp tapioca flour, dissolved in a little water
Oil for frying

Method of making:
Heat the oil for frying the claws. Make sure the claws are submerged in the oil.
Fry the claws for 10 minutes on fire again. Don't forget to close the frying pan because the claws will explode a little.
Drain the fried claws, put them in ice water. Allow the claws to expand.
Heat the oil, saute the shallots and red chilies until fragrant. Pour in the water and add the claws.
Add spices and taste correction. When it is suitable, cook the claws for about 1 hour on fire again until the claws are soft and the spices absorb. Leave some water.
Finally, add the scallions and tapioca solution.
Stir until thickened.
Remove and serve warm with a sprinkling of sesame.
