INGREDIENTS

  • 180 g of semolina
  • 280 gr sugar
  • 200 gr cottage cheese
  • 45 grams of butter
  • 500 ml whole milk at room temperature
  • 300 ml water
  • 3 eggs
  • zest of 1 lemon, not grated
  • half orange peel not grated
  • grated half orange
  • powdered sugar



How to Make Migliaccio with Thermomix:

  1. To prepare the mils with Thermomix, first, collect the lemon zest and a little orange zest with a potato peeler and 100 g of granulated sugar in a Thermomix bowl. Blend everything for 10 seconds on speed 7. Then add water, milk, butter, and heat for 5 minutes at 90° on speed 3.
  2. From the hole in the lid, add the semolina to the rain, continuing to cook for 3 minutes, always at the same speed and temperature. Transfer the obtained cream to a bowl and let it cool.
  3. In a clean mixing bowl, beat the eggs with the rest of the sugar, grated orange zest, and ricotta for 30 seconds on speed 6, then for 10 seconds on speed 7. Finally, add the semolina-based mixture and mix. for 50 seconds at 6 speeds. Transfer the dough to a 22 cm diameter springform tin that has been greased and dusted with flour. Cook millet in a preheated oven at 180 ° in a ventilated mode for about 40 minutes.
  4. Turn off the oven and let sit for 10-15 minutes with the door half-open, then remove from the oven and let cool to room temperature. Before serving the mils, sprinkle with a little icing sugar.
