Recipes Japan | Yokan is a traditional Japanese snack made from gelatin and red bean paste. Not only red beans, now there are many variants of yokan with sweet potato, pumpkin, and so on.
Ingredients:
- 2 1/2 grams of kanten
- 300 grams of Koshi-an
- 3 very ripe persimmons
- 4 tbsp brown rice syrup
- 100 ml water
- 300 grams of sugar
Equipment:
- 1 nonstick pot or pan
- 1 small mold or flat container
- 1 funnel (optional)
- 1 toothpick or skewer
How to Make Yokan:
- Remove the top of the persimmon and scoop the pulp into a bowl. It should be a mess!
- Heat the water until it boils then add the kanten. Stir frequently for 2 minutes and reduce heat.
- Add sugar to dissolve.
- Add the Koshi-an and brown rice syrup. Bring to a boil. Continue stirring until the sauce thickens and you can see the bottom of the pan between stirrings.
- Turn off the heat and add the persimmon pulp. Stir well to combine.
- Pour into flat molds, more than 1 inch deep. I used a very small bread pan and funnel.

- Pop the bubbles on the surface with a toothpick. Let it cool at room temperature for 2 hours without touching it.
- You can put it in the fridge until it is completely solid. Slice and serve with green tea!
