Ingredients:

  • 4-5 eggs
  • 4 medium sized tomatoes
  • 1 medium onion
  • 2 red bell peppers (small size)
  • 2 green bell peppers (small size)
  • Salt to taste
  • 4 tbsp oil


How to make Menemen Turkish:

  1. Finely chop the onions, tomatoes and both types of peppers, fine, maybe a bit coarse. Set aside.
  2. Heat the oil. Saute onions until wilted.
  3. Add the paprika. Saute until wilted.
  4. Add the tomatoes. Stir. Cover the pan, cook until the tomatoes are cooked and crushed, but not like puree. Stir occasionally, so it doesn't burn.
  5. Add the eggs. Stir (scrambled) until smooth. Cook until eggs are cooked.
  6. Add salt (and pepper if using). Stir well.
  7. Lift. Serve with fresh bread.
